Pepper Slaw

 





Ingredients:

bell peppers, (yellow and green) 

1 small red onion

3 tablespoon apple cider vinegar

1 tablespoon olive oil

1 teaspoon sugar

1 teaspoon salt

1/2 teaspoon ground pepper

Directions:

1. In a medium bowl, mix vinegar, olive oil, sugar, salt and pepper with wire whisk. Set aside.

2. Core and cut the  green and yellow bell peppers into match-sticks strips. Cut the red onion into very thin slices.

3. Add dressing to the vegetables, toss to coat well and serve.
