Cherry Cheesecake







Ingredients:

  Crust:
1/2 cup graham crackers (crumbs)
1/2 tsp cinnamon
2-4 tbsp butter, melted
1 tbsp sugar
1 tsp lemon rind

  Filling:
1 (225g) block of cream cheese
1 cup all purpose cream
1/4 cup sugar
1/2 cherries
3 tbsp fresh milk
1 tbsp unflavored gelatin

Crust:
Mix crumbs with cinnamon,sugar, butter and lemon rind. Press on bottom of ungreased spring form pan.

Filling:
Whip chilled cream with 2 tbsp sugar until stiff. Set aside. Gradually beat remaining sugar into softened cheese. Beat until fluffy. Add gelatin mixture ( gelatin softened in milk and heated until dissolve completely).
Fold cheese mixture into whipped cream. Blend well. Pour on crumb-lined pan. Chill thoroughly. Top cheesecake with cherry filling. Chill.
