Creamy Beef Linguini



                                                  Creamy Beef Linguini


Ingredients:
1 tbsp or 10 g vegetable oil
400 g low-fat minced beef
1 medium onion or 100g, finely chopped
4 cloves or 20 g. garlic, crushed
1 cup or 250g water
2 cubes chicken stock
300 g linguini pasta
2L or 8 cups boiling water
1/2 cup or 125 ml cream
1/2 cup or 50g asiago cheese, grated
1 tbsp or 5g parsley, chopped
1/4 cup or 25g parmesan cheese, grated (optional garnish)

Direction:
>Heat vegetable oil in a large saucepan and saute minced beef and onions until beef is fully cooked.
>Add garlic, water and chicken stock and simmer over medium heat for 5 minutes.
>Meanwhile, cook pasta in boiling water, drain and add to pan, tossing with beef and sauce.
>Add cream, asiago cheese and parsley and stir over medium low heat until cheese is melted.
>Serve on a platter with a sprinkle of parmesan cheese as an optional garnish.

Cooking Tip: Drain any fat rendered from beef during the cooking before adding garlic and water to the pan.
