SHRIMP WITH VEGETABLES
400g.shrimps,shelled and deveined
1/2 cup pre-cooked,diced bamboo shoots
1/2 cup diced carrots
1/4 cup cooked green peas
1 1/2 tbsp. diced mushrooms,soaked (optional)
1 tbsp thinly sliced ginger
1/4 cup green onions,cut into strips
1 can(150 g.) tomato sauce
1/2 cup shrimp juice
Seasonings:
Salt, pepper and soy sauce(according to taste)
1/2 tsp sesame oil
1/2 tsp. rice wine
Tossing Mixture:
salt
1 tbsp rice wine
1 egg white
1 tbsp cornstarch
Combine shrimps with tossing mixture. Fry and set aside.In the same pan,stir-fry each vegetables, one at a time.Set aside.
Saute ginger and green onions. Add shrimps,vegetables,tomato sauce and shrimp juice. Add seasonings. Simmer for 10 minutes or until vegetables are cooked.Serve on top of steaming rice.
SHRIMP JUICE: Pound heads and shells of shrimps. Boil in enough water. Strain.
