Creamy Chicken Orzo





Ingredients:
1 tbsp or 15g butter
400g chicken breast, cut into small pieces
2 medium or 50g shallots, finely chopped
2 cloves or 10g fresh garlic, chopped
5 cups or 1.25L water
2 cubes chicken stock
2 cups or 350g orzo pasta
1/2 cup or 125 ml light cooking cream
3 medium or 300g tomatoes, peeled and diced
1 cup or 150g frozen peas, thawed
1/2 cup or 50g parmesan cheese, grated
1 tsp or 2g black pepper, freshly cracked

Directions:
In a medium pot, melt butter and saute chicken until almost cooked, but not brown. Add shallots and garlic and saute until tender.
Add water and chicken stock, bring to a boil and dissolve.
Add pasta to the chicken and cook, stirring occasionally.
When the pasta is al-dente, add cream,tomatoes, frozen peas and parmesan cheese and remove from heat and serve.
Sprinkle with black pepper to taste.
