Baked Fusilli and Meatballs










Ingredients:

For Meatballs:
 250g minced beef
 250g beef sausage, removed from casing
 1 tsp or 3 g each: dried oregano,dried basil, red chilli flakes
 1 tsp or 5g garlic powder
 1 small or 50 g onion, finely chopped
 4-5 slices of toast bread, cut into 5 mm pieces

For Sauce:
 1 tbsp or 10 g olive oil
 1 medium or 150g onion, chopped
 4 cloves or 20g garlic,finely crushed
 2 tbsp or 30g tomato paste
 1 cup water
 2 cubes chicken stock
 1 tbsp or 5g dried basil leaves
 1 tsp or 3g dried oregano leaves
 1 can or 400g crushed tomatoes with juice
 400g fusilli pasta
 2L or 8 cups water
 1 cup or 100g mozzarella cheese, shredded

Directions:
To prepare meatballs: Combine all ingredients in a mixing bowl, knead to a uniform mixture,form into 2cm balls and bake in a preheated oven at 180C for 15 to 20 minutes until meatballs are fully cooked and slightly golden on top. Remove and set aside.

To prepare sauce: Heat olive oil in a deep saucepan, add onions and cook until tender. Add garlic and tomato paste and saute for another minute.
Add water, chicken stock, basil,oregano and tomatoes to the pan. Cover and simmer for 15 to 20 minutes.
Meanwhile, cook pasta in boiling water, drain and transfer to the baking dish. Mix mozzarella cheese to the pasta, place cooked meatballs over the top and pour sauce on top.
Gently mix to coat pasta and meatballs with sauce and bake in a preheated oven at 170C for 20 minutes until pasta is soft.

Cooking Tip: Use a spicy sausage to add a new flavour dimension to the dish.
