Vasilopita (Greek New Year Cake)












Ingredients:
250 g unsalted butter
1 tsp grated orange rind
1 1/2 cups castor sugar
5 eggs
4 cups self -raising flour
1/2 tsp ground aniseed
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1 cup orange juice

Directions:
Grease a deep 28 cm round cake pan, line base with paper, grease paper. Cream butter, orange rind and sugar in small bowl with electric mixer until light and fluffy. Beat in eggs one at a time, until combined. Transfer to a large bowl.
Fold in sifted dry ingredients, alternately with orange juice. Spoon into pan, bake in moderate oven for 1 hour. Turn immediately on to wire rack to cool. When cold, make a small cut in base of cake and insert coin( wrapped in foil). Before serving, dust cake with sifted icing sugar, decorate as shown, if preferred.

Note: The name is derived from St. Basil, whose feast day is celebrated at New Year. It is customary to insert coin in the cake for good luck.
