Ingredients:
300 gm sun-dried tomatoes, with oil
1 small or 50g onion, chopped
4 cloves or 20g garlic, crushed
2 tbsp or 30g tomato paste
1 cup water
2 cubes chicken stock
300g spaghetti pasta
100g fresh goat cheese, crumbled
2 tbsp or 10g fresh parsley, chopped
Direction:
1.Remove sun-dried tomatoes from oil and chop into small pieces. Reserve oil for cooking.
2.Heat 2 tablespoon of the oil from the sun-dried tomatoes in a large frying pan; add onions and saute until soft, about 3 minutes. Add garlic and tomato paste and continue to cook for another 2 minutes.
3. Add water and chicken stock and stir until dissolved.
4. Add chopped sun-dried tomatoes and simmer until tomatoes are soft, about 2 minutes.
5. Meanwhile, cook pasta in boiling water until al dente; drain and toss with the sauce.
6. Remove pan from heat and toss in chopped goat cheese and parsley. Serve on a large platter.
