Escarole Mesclun Salad








Ingredients:
1/4 cup olive oil
1/4 cup wine vinegar
2 tbsp fresh lemon juice
2 to 3 tsp honey
1/8 tsp salt
Dash dry mustard
3 cups torn escarole
3 cups torn romaine
1 cup torn bibb lettuce leaves
1 cup torn radicchio
1 cup torn red-tip lettuce
1 tbsp chopped fresh basil leaves
1 tbsp chopped fresh parsley
1 tbsp chopped fresh chives

Direction:
1. Combine olive oil, vinegar, lemon juice, honey, salt and mustard. Let stand 1 hour.
2. Toss together greens and herbs.
3. Drizzle vinaigrette over greens. Top with freshly ground pepper, if desired.
