Carrot and Walnut Cake






Ingredients:
1 cup self raising flour
1 tsp bicarbonate of soda
1 tsp ground cinnamon
1 cup brown sugar, firmly packed
1 1/2 cups grated carrot
1/2 cup sultanas
1/2 cup chopped glace ginger
1/2 cup walnut, chopped
2/3 cup oil
2 eggs, lightly beaten

Cream Cheese Frosting:
60 gm packaged cream cheese, softened
30 gm soft butter
1 tsp grated lemon rind
1 1/2 cups icing sugar

Direction:
Grease a 15 cm x 25 cm loaf fan, line base with paper; grease paper. Sift flour,soda, cinnamon into medium bowl of electric mixer, stir in sugar, carrot, sultanas, ginger,and nuts. Combine oil and eggs, add to flour mixture; beat on medium speed for 5 minutes. Pour mixture into prepared pan, bake in moderately slow oven for about 55 minutes. Turn onto wire rack to cool. When cold, spread with frosting. Decorate with walnut halves, if desired.
Cream Cheese Frosting: Beat cheese cream, butter and lemon rind in small bowl with electric mixer until light and fluffy, gradually beat in sifted icing sugar.
