Beets Baked with Zest



Ingredients:
8 medium beets
1 tbsp olive oil
1 1/2 tsp red wine vinegar
1 orange
1 (8 oz) carton nonfat sour cream

Direction:
1. Preheat oven to 400 F. Place washed and trimmed beets on sheet of aluminum foil. Fold and seal tightly. Place on baking sheet.
2. Bake for 1 1/2 to 2 hours. test beets with a knife. They should be tender but firm.
3. Cool slightly and peel. Slice into 1/4-inch rounds and place in bowl. Blend oil and vinegar and pour over beets. Toss. Add salt and pepper to taste. Arrange beets on plates.
4. Use a vegetable peeler to remove zest(peel) from orange. Finely chop zest and stir into sour cream. place a dollop of mixture atop beets.
