Fried Rice with Mixed Vegetables












Ingredients:
1 small onion, finely chopped
2 cloves garlic, minced
1 tbsp freshly grated ginger
2 tbsp vegetable oil,  divided
1 medium carrots, peeled and diced
1/2 cup of frozen green peas
1 small red bell pepper, diced
1 tsp soy sauce
1 tsp sesame oil
2 eggs
2 cups cooked white rice
salt and black pepper, to taste
green onions,  to garnish

Directions:
1. Scramble the eggs, add a pinch of salt and black pepper. Fry it in 1 tbsp of vegetable oil ,when cooked cut into small pieces and set aside.
2. In the same skillet, put the remaining vegetable oil and sauté the ginger until it softened and give a nice fragrant, add the onion and garlic.Add the carrots, green peas and red bell pepper, mix it thoroughly till half cooked then add the cooked scrambled egg.
3. Toss the cooked rice with the mixture, the add soy sauce and sesame oil. Season with salt and pepper. Continue mixing till its cooked.
4. Put on a big platter and garnish with green onions.
