Garlic Buttered Shrimp with Coriander



Ingredients:
500 gms large shrimp, cut head, peeled and deveined
6 cloves of garlic, minced
Juice of 1/2 lemon
1/2 tsp salt
1/2 tsp ground black pepper
1 tbsp coriander leaves, chopped
3 tbsp unsalted butter
2 tbsp scallions

Directions:
1. In a bowl, marinate the cleaned shrimp with garlic,  lemon, salt and pepper and chopped coriander in a refrigerator for an hour.
2. In a skillet, heat the butter then put the marinated shrimp and cook until the shrimp turn out pink, mixing once in a while to cook evenly.
3. Add the scallions and continue cooking, stirring until the shrimp are firm and cooked through for another 1 or 2 minutes. Taste and add more seasoning according to your taste.  Serve hot.
