Siopao (Steamed Bun)










Ingredients:

 Sweet Roll:
8 cups flour
3/4 cup sugar
2 tbsp yeast
1 cup dry milk
2 1/2 cups warm water
3/4 cup margarine
2 tsp salt

Filling:
500 g  chicken breast, thinly sliced
1 large onion, sliced
2 cloves garlic, chopped finely
1 tbsp soy sauce
1 tbsp oyster sauce
1/2 tsp salt
1tsp ground black pepper
1tsp sugar
4 hard boiled eggs, sliced

Directions:
1. In a large bowl, combine warm water and sugar. Stir until sugar is dissolved. Add yeast to the water, stir, then add margarine, dry milk, salt and enough flour to make a soft dough , about 2 cups. Cover and let it rise for 1 hour in a warm place.
2. Meanwhile, on a medium high heat, fry onion and garlic and add the sliced chicken. Let it cook for at least 10 minutes, stirring once in a while, then add soy sauce, oyster sauce, salt and pepper. (according to your taste). Set aside and let cool.
3. Take out the dough and beat vigorously for a few minutes. Add the rest of the flour to make a soft dough, soft enough to handle. Cover and let rise until double in size, at least 30 minutes. Shape into balls, the size of your fist or smaller. Cover and let it rise again until double in size.
4. Roll each ball and put a spoonful of the cooled chicken mixture and a slice of egg on top , close the dough tightly to make sure that the dough will not open during cooking. Cut a small square of wax paper and put the finished bun on it. This is to ensure that the dough will not stick on the steamer when cooking. Continue with all the remaining dough.
5. Fill the steamer pot with water , about 3 liters or more, depending on the size of your steamer. Let it boil before putting the buns. Steam for 20 minutes.
