Green Lintel Salad


























Ingredients:
1/2 cup green lintel
1 yellow capsicum, cut into cubes
1 cucumber, cut into cubes
2 medium sized tomato, cut into cubes
1 small onion, chopped into small cubes
A handful of fresh parsley, chopped
2 tbsp fresh mint, chopped
1/2 lemon
1 tbsp balsamic vinegar
1 tsp salt, according to taste
1 tbsp olive oil

Direction:
1. Boil the green lintel in a small pot with 2 cups of water or more, keep it boiling till it become soft. Wash and drain. Keep it aside till it cools down.
2. Meanwhile, wash and cut all the vegetables.
3. Mix the lemon, balsamic vinegar, olive oil and salt in a small bowl.
4.Put all the vegetables and lintel in a big bowl, mix with the seasoning. Serve.
