Mjaddara ( Rice with Green Lintels)









Ingredients:
1 cup green lintels
2 cups of rice
2 chicken cubes
2 tbsp olive oil
1 tbsp cumin powder
2 to 3 cups water
1 tsp of salt
2 big onion, sliced thinly

Direction:
1. Soak the green lintel in hot water for 1 hour. Check the beans if its soft by pinching in half, if it's soft, then it's ready to start cooking.
2. Put olive oil in a cooking pot, on a medium high heat add the soaked lintel, mix once in a while to avoid sticking to the pot. Add the chicken cubes and cumin to absorb the taste of the spice to the beans, then add the washed rice.Mix it together, add salt then add water. Let it simmer for 10 minutes on a medium high heat. Once it dries up , keep the fire to very low heat so it won't get burned, continue cooking for a few more minutes till it absorbed all the water and the rice is cooked.
3. Meanwhile, slice the onions and fry in oil till golden brown. Set aside.
4. When ready to serve, put the rice mixture in a big platter, and garnish with the browned onion at the top. Best serve with yoghurt and mixed salad.
