Ingredients:
2 tbsp olive oil
1 medium size onion, chopped
1 clove garlic, minced
10 pcs ripe red tomatoes, peeled and sliced
2 cups water
2 cubes vegetables or chicken stock
1/2 tsp salt, or according to taste
1/2 tsp pepper
spring onion, chopped finely, to garnish
Directions:
Heat oil in a large saucepan, add onion and garlic. Pour the stock and add the the fresh tomatoes. Add salt and pepper and let it simmer for 45 minutes, stirring occasionally. Puree the soup in batches until smooth, then return to the pan and reheat on high heat for 5 minutes before serving.
