Madeleines


 



Ingredients;

1/2 cup plus 2 tbsp butter, melted

2 large eggs

1/2 cup granulated sugar

1 tsp vanilla extract

1/2 tsp grated orange peel

1/4 tsp salt

3/4 cup all purpose flour

Confectioner's sugar, optional

Directions:

Brush Madeleine molds with melted butter. Flour molds, topping out excess. Beat eggs, granulated sugar, vanilla extract, orange peel and salt in mixing bowl until light, about 3 minutes. Fold in flour alternately with 1/2 cup butter, beginning and ending with flour.

Fill molds with the mixture three quarters full. Bake in a preheated oven at 350 F for 10 to 12 minutes, until edges are golden and pull away from the molds. Remove from the molds when its completely cool then sift with Confectioner's sugar over rippled side.
