Steamed Cassava Cake


 




Ingredients:

1 kilo cassava, finely grated

2 eggs

1 can condensed milk, 300ml

1 can evaporated milk, 140ml

4 tbsp unsalted butter, melted

4 tbsp brown sugar

Directions:

1. In a slow fire melt the brown sugar until caramelized. Pour in the baking tray or aluminum molder and spread evenly and set aside.

2. Grate cassava in a fine grater, remove the hard part in the middle , to make 4 cups. Squeeze the excess juice of the cassava in a strainer using spoon.

3. In a big bowl, put the freshly squeezed cassava, add the slightly beaten eggs, condensed milk , melted butter and evaporated milk. Mix well until well combined.

4. Pour the mixture to the baking tray or molder with the caramelized sugar, about 3/4 full. Arrange in steamer and cook for 45 minutes to 1 hour. Check with toothpick stick to make sure its cooked. Let it cool for a while before separating from the molder.
