Ingredients:
1 kg fish fillet, cut into thick strips
juice of 1 lemon
2 tbsp cumin powder
1 tbsp turmeric powder
10 whole cloves garlic
2 tbsp salt
1 tsp ground black pepper
2 tbsp cornstarch
1 tbsp flour
cooking oil
3 cups of rice, uncooked
2 tbsp fresh parsley, chopped to garnish
Directions:
1. Marinate fish in 1 tbsp of salt, pepper, 1 tbsp cumin, and lemon for 30 minutes. Coat with cornstarch and flour mixture. Fry until golden brown and set aside.
2. In a medium sized pot, take 2 tbsp of used oil from the fried fish and sauté garlic till golden brown. Add the washed rice and toss for a minute. Add 1 tbsp cumin powder, turmeric powder, salt, and pepper and add 4 cups of water. Cover with a lid and let it simmer for 15 minutes. Once it started to boil, put the heat to medium low and continue cooking for another 5 minutes or until the rice is cooked. Add the fried fillet at the top before serving.
