Sticky Rice Cake

 




Ingredients:

4 cups glutinous rice

1 cup white sugar

4 cups water

1/4 cup butter

Topping:

1 can condensed milk

1 cup coconut milk

3 tbsp molasses

Directions:

Wash and drain glutinous rice. In a medium pan, combine with sugar and water with the glutinous rice and cook on a medium high heat. Once it started boiling, add butter. Mix well and let cook for 10 to 15 minutes, or until rice is done. 

Spread the mixture on a greased baking dish. Bake for 20 minutes in a preheated oven, at 300 F. Meanwhile, combine topping ingredients in a small saucepan. Cook over low heat for 15 minutes or until mixture slightly thickens. Pour over rice mixture , spread evenly and bake for further 15 minutes, till topping is bubbly and becomes brown. Allow to cool before serving.
