Ingredients:
3 medium beetroot
3 eggs
1/2 cup lemon juice
1 cup sugar
1/2 cup oil
2 cups all purpose flour
1 tbsp baking powder
Chocolate Ganache:
1 cup Chocolate chips
1 cup whipping cream
Directions:
1. Peel the beetroot and cut into cubes. Put in the blender with the eggs and lemon juice. Blend the mixture then add sugar and oil. Blend again to attain a smooth texture.
2. Transfer into a big bowl, add sifted flour and baking powder. Mix with a whisker till well blended.
3. Pour into a round greased pan and bake in a preheated oven at 350 F for 45 minutes, or until toothpick inserted in center comes out clean. Cool 5 min; remove from pan. Cool completely.
4. To prepare the chocolate ganache, melt the chocolate chips in a very slow fire or in a microwave, once melted, add whipping cream and mix well. Pour on top of the cake.
