Lemon Tart

 


Ingredients:


Crust:

2 cups flour

1/2 cup powdered sugar

1 cup unsalted butter, softened and cut into small pieces

Filling:

4 eggs

1 1/4 cup sugar

1 tsp baking powder

1/2 tsp salt

3 tsp lemon zest

4 tbsp fresh lemon juice

Directions:

1. Combine sugar and flour in a bowl. Add the butter, use two forks or a pastry cutter and mx until the butter breaks into pea-size crumbs. Press the crust into a tart pan with a removable bottom, shaping a 1/2 inch edge up the sides. Place in the middle of a pre heated oven at 180 C and bake for 20 minutes.

2. Meanwhile, in a large bowl, beat the eggs. Add the sugar, baking powder, salt, lemon zest and lemon juice. Beat until light and fluffy.

3. Pour the mixture over the hot crust. Place the tart back on the middle rack and bake for about 25 minutes, or until no indentation remains when the filling is touched lightly in the center. Remove from the oven and let cool before slicing. Note: This recipe is good for 2  9"round pan..
