Salad Nicoise

  




Ingredients:

4 small potatoes, scrubbed and halved

2 tbsp olive oil

1 tbsp white wine vinegar

1 tbsp lemon juice

1 tsp mustard

salt and pepper, to taste

Pinch of sugar

2 medium size tomatoes, quartered

1 cucumber, cut in halves

100 g cooked green beans

2 hard-boiled eggs, shelled and quartered

1/2 iceberg lettuce, cut into chunks

2 tbsp chopped parsley

Directions:

1. Cook potatoes in boiling salted water until tender. Meanwhile, make dressing by whisking together the olive oil, vinegar, lemon juice, mustard and sugar. Season generously with salt and pepper.

2. Drain potatoes and toss in the dressing. Leave to cool, stirring occasionally.

3. Arrange in a bowl the tomatoes, cucumber, greens beans, lettuce, hard boiled eggs and cold marinated potatoes. Flake the tuna into large chunks and add into the bowl. Sprinkle chopped parsley over the top, if desired and available.
