Three Bean Salad

 


Ingredients:

1 can red kidney beans

1 can chick pea beans (hummus)

1 can black beans

1 cup celery stalk, chopped

1 medium red onion, chopped

1 head lettuce

handful of fresh coriander, roughly chopped

2 tbsp fresh mint leaves

Dressing:

1/4 cup lemon juice

2 tbsp balsamic vinegar

1/4 cup olive oil

1 tsp cumin powder

salt and pepper, to taste

Direction:

Rinse the canned beans in cold running water, strain to remove the liquid. Put in a big bowl together with the rest of  the ingredients and pour the dressing.
