Sunkissed salad







Ingredients:
1/2 kg french beans, washed and trimmed
1/2 kg cottage cheese
6 eggs, hard-boiled
2 red peppers, deseeded and sliced
4 x 15 ml spoons french dressing

Directions:
Cook the beans in boiling salted water until tender-about 10 to 15 minutes. Cool, then place in a round serving dish. Pile the cottage cheese in the centre and surround with the quartered hard-boiled eggs. Garnish with the chopped red pepper,between the eggs and around the cottage cheese. Just before serving pour the dressing over the beans and pepper slices.
