Mussels with Vegetables

 





Ingredients:

1 kilo mussels with shells

3 pieces zucchini, sliced

bunch of bok choy

2 tablespoon cooking oil

1 cup water

3 cloves garlic, minced

1 medium onion, chopped

1"ginger, chopped finely

salt and pepper, to taste

Directions:

1. Wash and clean the mussels under cold  running water to remove sands and pull the beard from the inside.

2. In a cooking pot, heat cooking oil and add onion, ginger and garlic. Add washed mussels with one cup of water. Cover and let it simmer for 5 minutes, mixing once in a while. 

3. Add zucchini and let it boil before adding bok choy. Season with salt and pepper.
