Sweet and Sour Pork





Ingredients:
25g butter
1/2 kg lean pork fillet, cut into chunks
4 onions, peeled and sliced
500ml beef stock
100g pineapple chunks, drained from syrup
1 small green pepper, deseeded and sliced
1 small red pepper,deseeded and sliced
1 x 15 ml spoon soy sauce

Directions:
Melt the butter in a heavy-based saucepan and brown the meat evenly. Transfer meat to an ovenproof dish, leaving surplus fat behind. Soften the onions in this and add to the meat. Add the beef stock and cook in a slow oven for 2 - 2 1/2 hours or until the  meat is tender. About 1/2 hour before serving , add the diced pineapple chunks, green and red peppers and soy sauce.Serve with rice.
