Chicken and Egg Balls






Ingredients:
6 hard-boiled eggs, shelled
3 x 15 ml spoons finely chopped chives
250 g cooked chicken
5 x 15 ml spoons low-calorie mayonnaise
Salt and freshly ground black pepper
25 g breadcrumbs , browned
4 x 15 ml spoons finely chopped parsley
To finish: Lettuce
               tomato wedges
               parsley sprigs

Directions:
Dice the hard-boiled eggs and mix the the chopped chives. Minced the chicken and add, with the mayonnaise. Mix to bind and season to taste. Divide the mixture into 12 and roll each portion into a ball. Combine the breadcrumbs and chopped parsley and lightly roll each ball in this mixture to coat evenly. Chill thoroughly. Serve on a bed of lettuce ,garnished with the tomato wedges and sprigs of parsley.
