Gazpacho Soup





Ingredients:
1/2 kg ripe juicy tomatoes, skinned
1 large onion, peeled and chopped
1 small green pepper, deseeded and chopped
1 clove garlic, skinned and finely chopped
1 x 15 ml spoon wine vinegar
.1 x 15 ml spoon olive oil
1-2 x 15 ml spoons lemon juice
150 ml tomato juice
salt and freshly ground black pepper
 To finish: half cucumber, peeled and diced
               croutons, toasted

Directions:
Puree the tomatoes, chopped onion, green pepper, garlic, vinegar, and olive oil in a blender, or push through a fine sieve. Turn into a basin, add the lemon juice and tomato juice, season to taste and chill thoroughly in the refrigerator.Serve sprinkled with the diced cucumber and croutons.
