Grilled Potato Salad






Ingredients:

Dressing:
    4 tbsp country Dijon mustard
    1 tbsp white wine or apple cider vinegar
    3 tbsp olive oil
    2 tbsp chopped dill
    1/2 tsp salt
    1/4 tsp black pepper

Salad:
    1 tsp salt
    2 lbs small red potatoes, cut into 1/2- inch slices
    2 tbsp olive oil
    1 green onion, thinly sliced

Directions:
1. Combine dressing ingredients in small bowl. Blend well with fork; set aside.
2. Preheat grill to medium-hot. Bring 8 cups water and salt to a boil. Add potatoes; boil about 5 minutes. Drain. Transfer potatoes to bowl. Drizzle with olive oil and toss lightly.
3. Spray foil with nonstick cooking spray. Place potatoes on foil; fold into packet. Place packet on grill 7 to 10 minutes or until potatoes are tender. Transfer to serving bowl. Add green onion. Toss gently with reserved dressing. Serve warm.
