Monk's Mackerel






Ingredients:
4 medium mackerel, cleaned and gutted
2 onions, peeled and chopped
2 bay leaves
4 tbsps lemon juice
2 tsps dried mixed herbs
12 black olives
Salt and freshly ground black pepper
 To finish:
Watercress sprigs
lemon wedges

Directions:
Place the mackerel on a non-stick baking dish and cover with the onion, bay leaves, lemon juice, herbs and stoned olives. Season well with salt and pepper. Cover with foil and bake for 30-40 minutes until the fish is cooked.  Serve hot with the watercress sprigs and lemon wedges as a garnish.
