Curry Meatloaf with Fruity Sauce









Ingredients:

500 g minced beef
1 cup stale breadcrumbs
1 onion, finely chopped
1 clove garlic,crushed
130 g canned capsicum, drained,finely chopped
2 tbsps sour cream
2 tbsps mayonnaise
1 egg, lightly beaten
2 tsps curry powder
1 tsp paprika
2 beef stock cubes, crumbled
1/2 tsp ground oregano leaves
1 tbsp chopped fresh mint
1 tbsp sesame seeds

Fruity Sauce:
300ml carton thickened cream
2 tbsps fruit chutney
1 tsp seeded mustard
15 g butter

Directions:
Lightly grease a 14 cm x 21 cm loaf pan. Combine all ingredients except sesame seeds in large bowl., mix until thoroughly combined. Press mixture into prepared pan, bake in moderate oven for about 1 hour, ( or microwave on HIGH for about 25 minutes in microwave-proof loaf pan.
Pour any juice from pan, stand meatloaf 5 minutes before turning on serving plate, sprinkle with sesame seeds. Serve meatloaf sliced with fruity sauce.

Fruity Sauce:
Combine all ingredients in saucepan, stir constantly over heat, without boiling, until well combined and slightly thickened.
