Tuna - Macaroni Casserole








Ingredients:
2 cans Tuna flakes in vegetable oil, drained
400 g macaroni, uncooked
1/4 cup butter
3/4 cup onions, chopped
1/3 cup celery stalk, chopped
1/3 cup red pepper, diced
1 1/2 cups chicken stock
1 1/2 tsp salt
1/4 tsp ground black pepper
2 cups full cream milk, scalded
4 tbsps butter
4 tbsps flour
2 tbsps breadcrumbs
1 1/2 cups quick-melted cheese, grated or thinly sliced

 Direction:
Cook macaroni according to package directions. Set aside
Melt butter in a deep saucepan. Saute onions then add celery. Add red pepper and saute lightly. Pour in chicken broth and simmer. Season with salt and pepper. Add scalded milk and allow to simmer.
In a separate pan, melt butter and mix flour, stirring constantly. add to milk mixture and continue stirring until sauce thickens lightly. Remove from fire.
Combine cooked macaroni with white sauce, reserving 1/2 cup of sauce for topping.Pour mixture onto a buttered baking dish and spread tuna flakes evenly on top.Spread the reserved sauce on top and sprinkle with bread crumbs. Top with grated quick-melt cheese and bake at 400 F for 15-20 minutes or until cheese melts.
