Chicken and Broccoli Pesto












Ingredients:
1 tbsp vegetable oil
1 medium onion, finely chopped
500 g chicken breast, cut into 1 cm cubes
2 cups water
2 cubes chicken stock
1/3 cup cashew nuts
2 cloves garlic
1/2 cup basil
300 g broccoli florets
4oo g pasta
2 L boiling water
1/2 cup parmesan cheese
1 tsp  crushed red pepper

Direction:
> Heat vegetable oil in a large saucepan and saute onion until tender. Add chicken and continue cooking for another 5 minutes. Take care not to brown the chicken.
> Add water, chicken stock and simmer over medium heat until chicken is fully cooked, about 10 minutes.
> Meanwhile ,grind cashew nuts, garlic, basil and broccoli in a food processor to a coarse powder and add to chicken.
> Cook pasta in boiling water, until al dente, drain and add to the pan and coat with sauce.
> Remove from heat and toss in parmesan and crushed red peppers.
>Serve warm on a large platter.
