Okra and Fish Creole




Ingredients:
1 lb mild white fish fillets, 1/2 to 1 inch thick
1/2 cup sliced celery
1/2 cup sliced okra
1/2 cup strips green sweet pepper
1/2 cup sliced onion
1 (8 oz.) can tomato sauce
1/2 tsp chili powder
1/2 tsp garlic powder
1/2 tsp dried oregano
1/2 tsp dried thyme, crushed
2 cups cooked rice

Direction:
1. Preheat oven to 450 F. Rinse fish and pat dry. Bake fish, covered, in a greased shallow baking pan for 4 to 6 minutes per 1/2-inch thickness.
2. While fish is baking, in a small saucepan combine celery and next 6 ingredients. Bring to a boil; reduce heat. Simmer, uncovered, for 10 minutes, adding a little water if necessary. Flake with a fork and add to vegetables; add oregano and thyme and cook until heated through, about 5 minutes more. Garnish with fresh thyme, if desired.
3. Serve over rice.
