Cauliflower and Raisins






Ingredients:
1/4 cup golden raisins
1/4 cup sherry
1 head cauliflower, trimmed and cut into flowerettes
2 tsp finely chopped garlic
2 tsp olive oil
1 tbsp balsamic vinegar
2 tbsp pine nuts

Direction:
1. Soak raisins in sherry for 15 minutes.
2. Place flowerettes in steamer basket over 1 inch of boiling water. Cover and cook for 3 minutes.
3. In a skillet cook garlic in olive oil until tender. Add cauliflower, raisins, any remaining sherry and vinegar. Cover. Reduce heat to low.
4. Cook 3 to 5 minutes or until cauliflower is crisp tender. Top with pine nuts to serve.
