Cucumber Thai Salad




Ingredients:
1/3 cup distilled white vinegar
1/3 cup sugar
1/2 tsp red pepper flakes
1/2 tsp salt
2 lb. cucumbers, seeded and sliced into quarters
1/4 cup finely chopped red onion
2 tbsp fresh chopped cilantro
2 tbsp fresh chopped mint
1/4 cup chopped roasted peanuts
Fresh mint sprigs (optional)

Direction:
1. In large bowl, mix vinegar, sugar, pepper flakes and salt. Whisk until sugar is dissolved.
2. Add cucumbers, onion, cilantro and mint; toss until well combined. Refrigerate, covered, for 1 hour.
3. Before serving, add peanuts and toss again. Garnish with fresh mint, if desired.
