Ingredients:
2 ripe avocados
120 ml (8 tbsp) reduced-calorie vinaigrette
175 g (6 oz) Mozzarella cheese, thinly sliced
4 medium tomatoes, thinly sliced
Chopped parsley and mint sprigs, to garnish
Direction:
1. Halve avocados lengthways with a stainless steel knife. Then twist the two halves against each other to separate them and carefully remove the stones. Then peel and cut the avocados into slices.
2. Pour dressing over avocado slices. Stir to coat the slices thoroughly and prevent discoloration.
3. Arrange slices of Mozzarella on four individual serving plates. Next arrange avocados and finally the tomatoes on top.Spoon over the dressing from the avocados and garnish with chopped parsley and a sprig of mint.
