Chicken Empanada




Ingredients:

For the Dough:
2 cups all purpose flour
1 stick butter butter or margarine, cut into cubes
1/4 cup very cold water
1/2 tsp baking powder
2 tsp sugar (optional)
pinch of salt

For the Filling:
1/2 kg ground chicken
1 medium- sized potato, diced
1 small carrot, diced
1/2 cup green peas, cooked
2 tbsp raisins
2 cloves garlic,minced
1 medium onion,chopped
1 tsp pepper
1 tbsp oyster sauce
1 chicken broth cube
1 tbsp soy sauce

Directions:
1. Combine all dry ingredients in a medium bowl.Mix well.
2. Cut the butter into flour using pastry cutter or fork.Mix them thoroughly till combine.
3. The add in the water, small amount at a time.You can use your hand for easier mixing., to make sure that the flour absorbs water well.
4. When achieve the right consistency, knead the dough for 5 minutes or until dough becomes smooth. Then form into a ball, put in a plastic bowl or wrap in plastic. Chill for at least 1 hour in the refrigerator.
5.Meanwhile, saute garlic and onion in 2 tbsp oil,then add the ground chicken.
6. Season with pepper, soy sauce and oyster sauce and the chicken cube. Let it simmer till the chicken is cooked.
7. Add the chopped carrots and chopped potatoes. Mix them together with the chicken,cover with the lid to cook through then add the raisins and cooked green peas.
8.Cook for a few minutes, then set aside and let it cool.
9.In a floured board,roll out the dough using rolling pin.Cut the dough into circles,Fill it up with the filling and wrap carefully.Seal it using fork.
10. Make sure to make the oil hot before frying the empanada. Fry till golden brown on both sides.
