Cuban-Style Marinated Skirt Steak



Ingredients:
2 pounds skirt steak
2 cups orange juice, divided
1/2 cup lemon juice
1/2 cup lime juice
1/4 cup olive oil
5 cloves garlic, minced
1 tsp dried oregano
2 tsps grated orange peel
1 large onion, thinly sliced
3 cups  cooked   white rice
3 cups cooked black beans
Additional orange peel*(optional)

Directions:
1. Place skirt steak in glass baking dish. Mix 1 cup orange juice, lemon and lime juices, oil,garlic and oregano in medium bowl; reserve 1/2 cup. Pour remaining mixture over steak. Turn to coat steak. Marinate at room temperature 30 minutes.

2. Mix remaining 1 cup orange juice with orange peel in separate bowl. Add onion; marinate while preparing recipe.

3.Spray grill with nonstick cooking spray. Preheat grill to hot. Remove steak from marinade; drain well. Discard marinade. Grill steak 3 to 5 minutes per side or until desired doneness. Remove from grill; let stand 5 minutes.

4. Slice steak against the grain into thin slices; place on serving platter. Remove onions from orange juice; pile on top of meat. Serve with rice and black beans. Garnish each serving with 1 tbsp reserved juice mixture and additional orange peel, if desired.
