Avocado Quinoa Salad





Ingredients:

2 cups water
pinch of salt
1 cup quinoa
2 cups baby spinach
1 cucumber
4 medium tomatoes
2 avocados
1 lemon
4 tbsp olive oil
pinch of salt or according to taste
pinch of white pepper

Directions:
Boil 2 cups of water, sprinkle a pinch of salt, then add the quinoa , cover and let it simmer for 15 minutes.Let it cool in the refrigerator for 20 minutes.
Chop into cubes the cucumber, tomatoes, and avocado and add into the quinoa. Then add the baby spinach and mix together. Squeeze 1 lemon ,then add olive oil, season with salt and white pepper..
