Ingredients:
Salad:
1 medium-sized green papaya, shredded to make at least 3 cups
2 large cucumbers, cut into long strip
1 large carrot, cut into long strip
1 medium red bell pepper, cut into long strip
1/2 cup fresh mint leaves, chopped
Dressing:
Juice of 1 lemon
1 tbsp soy sauce
1 tsp salt
1 tbsp sugar or maple syrup
2 cloves garlic, grated
2 tbsp chopped green onions
1 tbsp olive oil
Directions:
1. Prepare the salad dressing in a small bowl and set aside.
2. Peel the green papaya, remove the seeds, wash and divide into four parts for easy handling. Using a manual grater, shred the papaya into long strip. Just be careful in shredding to avoid hurting yourself.Set aside.
3. Peel the carrots and cut into long strips. Set aside.
4.Cut the cucumber and red bell pepper in the same size. Add the rest of the other ingredients then mix them together with the salad dressing.
