Homemade Avocado ,Mango and Cucumber Sushi Roll









Ingredients:
1 cup Sushi rice
1/2 cup rice vinegar
2 tbsp sugar
1/2 tsp salt
3 seaweed sheets
1 avocado, skin and stone removed, sliced lengthwise
1 mango, pit removed, sliced lengthwise
1 cucumber, sliced lengthwise

Directions:
1.  To cook sushi rice:
    Wash the sushi rice with cold running water until water runs out clear. Put in a rice cooker with 1 1/2 cup of water, let it cook for 15 minutes, or until its done. Let it stand for a while to allow the rice to cool down before adding rice vinegar, sugar and salt using a wooden spoon.
2. Place a sushi mat on a clean surface with slats running horizontally. Place a seaweed sheet, shiny side down on the mat.
3. Use wet hands to spread cooked sushi rice over the seaweed sheet, leaving 3 cm wide border along the top edge for easy sealing.
4. Put a sliced avocado, mango and cucumber  at the top of the sushi rice ,aligning horizontally. Pick up the edge of the mat closest to you, hold filling in place while rolling the mat to enclose.
5. Repeat with the remaining sheets, rice and filling. Cut sushi rolls into 2 cm thick slices. Arrange on a serving platter and serve with soy sauce or any of your favorite sauce.
