Microwave Lemon Cake






Ingredients:
1 1/2 cups flour
3/4 cup sugar
3/4 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 tbsp lemon zest
1/4 cup lemon juice
1 egg
1/2 cup vegetable oil
1/2 cup evaporated milk

Directions:
1.In a small bowl, mix the dry ingredients.
2. In a big bowl, cream the vegetable oil, sugar and egg. Add the flour mixture, lemon zest, lemon juice and milk. Mix thoroughly, but do not over mix. 
3.In a safe microwave tray or silicone tray, oiled and floured, pour the batter, tap the tray to remove the lumps, then put in a microwave for 5 minutes. Check if its cooked, if not, cook again for another 1 minute. Let it cool for 15 minutes before removing from the tray.
