Waldorf Salad





Ingredients:
450 g (1 lb) eating apples
Juice of 1 lemon
2.5 ml(1/2 tsp) raw cane sugar
90 ml reduced-calorie mayonnaise
1/2 head celery, trimmed and sliced
50 g (2 oz) walnut halves, chopped
Lettuce leaves, to serve

Direction:
1.Core the apples but do not peel. Slice and dice the rest. Dip the slices in some of the lemon juice to prevent discoloration.
2. In a large bowl, toss the diced apples in 30 ml (2 tsp) lemon juice, the sugar and 15 ml (1 tbsp) mayonnaise. Leave to stand for about 30 minutes.
3. Just before serving, add the sliced celery, chopped walnuts and the remaining mayonnaise, and toss together.
4. Serve the salad in a bowl lined with lettuce leaves and garnish with the apple slices.
