Custard Pie







Ingredients:

For Pie Crust:
1 1/4 cup all purpose flour
1/2 tsp sugar
1/8 tsp fine salt 
1/2 cup unsalted butter, chilled and cut into cubes
1/2 cup ice water

For Custard Filling:
3 whole eggs
1/2 cup unsalted butter, softened
3/4 cup sugar
1 1/2 cups whole milk, scalded and lightly cooled
1 tsp vanilla extract
1 tsp lemon extract

Directions:
1. In a medium bowl, mix well the flour, sugar, and salt.
2. Add the cubed butter in the middle and mix using a pie dough cutter or two forks.
3. Pour the ice water gradually to the mixture while mixing continuously until well incorporated.
4. Shape into a ball, wrap with plastic wrapper and  refrigerate for at least 30 minutes to harden the butter.
5.On a floured board, flatten the dough using rolling pin, making a round shape to cover a 9 inch circular baking pan.
6. Shape on top of the baking pan and refrigerate again, while preparing the filling.
7. In a bowl, beat the eggs and sugar using electric mixer until fluffy, add lightly cooled milk, vanilla extract and lemon extract. Pour the mixture in the crust and bake for 1 hour or until crust turns golden brown.
8. Cool down the pie before serving.
