Seafood Kabsa









Ingredients:
3 cups rice
2 tbsp all-spice
2 tbsp olive oil
200 g mussels
250 g shrimp
250 g crabs
1 tomato, diced
1 medium sized onion, diced
3 tbsp fresh coriander, chopped
5 garlic cloves, diced
1/2 cup frozen green peas
1/2 cup frozen carrots
1 tbsp loomi powder
2 tbsp lemon juice
2 cubes of chicken stock

Directions:
1. In a bowl, mix 1 tbsp of all-spice with lemon juice and a tbsp of olive oil with the seafood. Mix them all together and bake for 30 minutes in a preheated oven.
2. Meanwhile, cook the onion with the remaining olive oil, add garlic, carrots and green  peas and stir for a few minutes.
3. Add the tomatoes, coriander , loomi powder, the remaining all-spice and chicken cubes and simmer.
4. Add the washed rice to the mixture, then add 4 cups of water. Cover and cook till liquids evaporate.
5. Top the rice with the cooked seafood. Cover and cook on a very low heat for 5 -10 minutes more.
6. Garnish with chopped parsley and green onion. Serve with lemon wedges.
