Fish Baked with Tomatoes and Chillies

 






Ingredients:

500 g king fish, sliced

3 big tomatoes, finely sliced

6 cloves garlic, finely chopped

3 green chillies, sliced thinly

3 tbsp olive oil

juice of 1 lemon

15 g butter, cut into cubes

salt and pepper, to taste

1 tsp ground cinnamon

1 tsp sesame seeds

Directions:

1. Season fish with salt and pepper. 

2. Mix the finely chopped tomatoes, garlic, and 2 tbsp olive oil, and salt and pepper.

3. In a baking pan, arrange half of the tomato mixture. Place the fish in a single layer on top of the tomatoes, then scatter the remaining tomato mixture and chillies on top of the fish.

4. Mix the remaining olive oil with the juice of 1 lemon in a small bowl. Pour on top of the fish and tomatoes. Cover with aluminum foil and place in a pre heated oven for 20 minutes.

5. When its almost done, scatter the butter on the mixture, sprinkle the cinnamon and sesame seeds over the top. Return the pan to the oven, uncovered and baked for another 10 minutes until fish cooked through. Serve with plain rice.
