Beef Zucchini Roll

 




Ingredients:

3 or 4 pcs zucchini

250 g beef, minced

2 tbsp olive oil

1 onion, chopped

3 cloves garlic, minced

4 eggs

salt and pepper, to taste

1 cup grated cheddar cheese

1 tbsp tomato paste

1 tbsp ketchup

Directions:

1. Wash the zucchini and cut into thin circle, sprinkle salt and pepper and set aside.

2. In a frying pan, saute onion and garlic, add minced beef. Season with salt and pepper, add tomato sauce and ketchup. Cook for 10 minutes in a medium heat till brown or until done. Keep it cool slightly.

3. In a medium bowl, whisk the eggs with salt and pepper. 

4.  In a rectangular pan, using parchment paper, layer the zucchini slices and strain the egg mixture while pouring on top of the vegetable. Bake at 180 F for 15 minutes.

5. Once done, cover the whole zucchini and egg mixture with grated cheese, then the beef mixture. 

6. Roll the zucchini with the toppings to make a log, removing the parchment paper while rolling the mixture. Bake for another 15 minutes. Serve hot.
